Still in a food coma from yesterday?! Fear not! You can save this recipe if you would prefer to not think about the massive amount of turkey that you consumed yesterday. If you are, however, ready to clean out your refrigerator since your traditional Black Friday Plans were derailed by COVID19, then I've got your covered! This recipe for turkey patties is one that you can make quickly and easily, all while making room for the inevitable Christmas cookie dough that will soon line the shelves of your refrigerator:
Left Over Thanksgiving Turkey Patties
Ingredients:
- 1 1/2 cups cooked turkey meat
- 1/2 cup cranberries, green beans, etc (chopped)
- 1/4 cup plain breadcrumbs
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 large egg
- 1/2 teaspoon fine salt
- 1/2 teaspoon black pepper
- 1 tablespoon minced fresh garlic
- 1/2 onion (chopped)
- 1/2 cup fresh parsley (chopped)
- 2 tablespoons olive oil for frying
Directions:
- Add the turkey, bread crumbs, yogurt, mustard, egg, salt, black pepper, garlic and onion to your food processor’s bowl.
- Process until chopped and incorporated.
- Transfer the mixture to a large bowl and fold in the parsley.
- Heat a griddle over medium heat for 4 minutes.
- Brush the griddle with olive oil.
- Use an ice cream scoop to measure out the patties and place them on the griddle. Flatten the patty out with a spatula.
- Cook the patties for about 3 minutes / side or until well-browned.
